In 1995, Choy graduated from The Hong Kong Academy for Performing Arts (HKAPA), and received a Hong Kong Jockey Club Scholarship to study at the Royal Northern College of Music in the UK. While studying, he started playing in professional orchestras and musicals. He has performed with orchestras such as Hong Kong Philharmonic Orchestra, Hong Kong Sinfonietta, Macao Orchestra and Academy of St. Martin in the Fields, and in musicals West Side Story, Damn Yankees! and The Wizard of Oz, to name a few.

Choy is an active percussion and timpani soloist. He is also a part-time faculty member at HKAPA, teaching percussion, and has been appointed as the Hong Kong consultant in Drum Kit by the Trinity Guildhall. He is also a member of the Hong Kong Percussion Ensemble and the Jenga Percussion Group.
